Ingredients

  • Groundnut oil
  • Sirloin steak 1 x 350g, fat removed, sliced into thin strips
  • Thai red curry paste 2 tbsp
  • Green beans 150g, cut into 3cm pieces
  • Red pepper 1, sliced into thin strips
  • Tilda Rizazz brown basmati rice 1 pack
  • Roasted peanuts 50g, crushed (optional)
Serves: 2   Cook Time: 15 Total Time: 15min whats this
 

Directions

  1. Heat tbsp oil in a wok or large frying pan to smoking hot. Add the steak and cook for a minute, turning to seal and lightly brown. Turn the heat down to medium and add the curry paste. Stir well and add tbsp water.
  2. Add the beans and red pepper and cook for minutes. Add a little more water if you prefer more sauce and serve with the brown basmati rice and the peanuts sprinkled over.

  4. This recipe is a Gi star. It's full of low to medium Gi ingredients, especially the rice, peanuts and veg.

  6. This also works well with pork. It's quite spicy so you might like to add a little coconut milk instead of the water.
