Help me cook a Mexican meal

My 11th wedding anniversary is approaching, and I’d like to cook something as a surprise for my wife. She loves Mexican food but unfortunately I’m not very sophisticated in the kitchen. Could you please suggest a very (and I mean very) simple dish that might help me demonstrate how much I love and appreciate her?

Thanks for your question. Your wife and I have a lot in common - I love Mexican food too. Nachos are the classic starter: sprinkle some grated Cheddar cheese over tortilla chips and pop under the grill for a few minutes until melted and bubbly.

There are several classic accompaniments to nachos. Buy a pot of ready-made guacamole (mashed up avocado with tomatoes and garlic) at the deli counter and serve as a dip or pour this over one-third of the nachos and melted cheese.

Another great dip or topping is picante salsa. Again, you can buy this ready made, either at the deli counter, in the Mexican food section or in the crisps and snacks aisle - Doritos make a couple of good jars of the stuff.

Cool things down a bit with a dollop or two of soured cream (in the milk and cream section). Again, serve as a dip or poured over the nachos.

If you like things hot, sprinkle over some pickled jalapeños (fortunately, jars of pickled chillies are now sold in the Mexican section of most large supermarkets).
