Cheat's Savoury Potato Chive 'Soufflé'
This incredibly simple dish is a good one to make if you have doubts about your ability to make soufflés. You can't go wrong.
Serves 6
6 peeled, cooked and mashed potatoes
225g cream cheese
60ml cream
60ml melted butter
2 large eggs
salt and pepper
bunch of fresh chives, chopped
pinch of paprika
- Preheat the oven to 180C/350F/gas mark 4.
- Purée all the ingredients in a food processor until smooth, reserving some chives for garnish.
- Place in a well greased baking dish and sprinkle with reserved chives and paprika.
- Bake in oven for an hour, or until the top turns pale golden.
