Thanks a brunch

  • For something sweet, make mini drop scones, and serve warm with a dab of whipped cream and blackcurrant or strawberry jam.
  • Pint-sized pancakes. Make a pancake batter and flavour with vanilla. Make tiny pancakes and squeeze with lemon juice, scatter with sugar and roll up.
  • Mini muffins. Make a mix of blueberry, banana, oatmeal, apple, or cornmeal. If you haven’t got a tiny muffin tray, blob the mixture into very small paper cake or truffle cases. Arrange on a tray with the pancakes.
  • Jammy soldiers. Cut out tiny soldiers of toast and spread with thick cut marmalade.
  • Make a clean finish with cubes of watermelon or fresh pineapple on toothpicks.
  • And to drink.. When it comes to drinks that go with brunch, there are two that stand out above the rest: Bloody Mary and Buck’s Fizz. To ring the changes, make your Bloody Marys with a pepper vodka base. Spice up tomato juice with horseradish. And rather than adding orange juice to champagne for Buck’s Fizz, offer jugs of peach juice to create Bellinis.
