Starter: Smoked Mackerel Pate
This is easily made in advance and makes a great starter or spread for a buffet table.

Serves 4-6 as a starter or snack

Ingredients
2 smoked mackerel fillets, skinned
3 1/2fl oz (100 mls) soured cream
3 1/2oz (100g) cottage cheese
juice of half a lemon
salt and pepper
wholemeal or savoury biscuits, to serve

Method
Make sure all the small bones and skin are removed from the mackerel fillets.

Flake the fish and place in the bowl of a food processor with the soured cream, cottage cheese and lemon juice. Blend until completely smooth and taste for seasoning, remembering smoked fish can be quite salty.

Spoon into small dishes or ramekins and chill in the fridge until ready to serve.
