Rhubarb and Banana Flapjack Crumble

This delicious dessert is a great standby – you'll probably find you already have most of the ingredients to hand.

Dish Details:


INGREDIENTS:

550g canned English rhubarb in light syrup
2 bananas, roughly chopped
25g sultanas
125g baking margarine or butter
6 tbsp orange blossom honey
50g demerara sugar
225g Scottish porridge oats
custard, ice cream or cream, to serve


PREPARATION:
1. Preheat the oven to 190C/375F/gas mark 5. Combine the fruits in an ovenproof baking dish.

2. Melt the margarine or butter in a saucepan, remove from the heat and stir in the remaining ingredients. Spoon this mixture over the fruit.

3. Cook the crumble towards the centre of the oven for 30 minutes. Serve with custard, ice cream or cream.
