Dish Details:


INGREDIENTS:

5 tbsp vegetable oil
700g raw potatoes, finely chopped
1 onion, finely chopped
1 tsp paprika
3 tbsp chopped parsley
salt and freshly ground pepper


PREPARATION:
1. Heat the oil in a large, non-stick frying pan. Add the potato, onion, paprika and a sprinkling of salt and pepper. Stir well then cook over medium heat, stirring, for about 5 minutes. Stir in the parsley.

2. Press the mixture down lightly and leave to cook for about 10 minutes, then turn in sections – it should be golden and crispy by now. Cook the other side for about 5 minutes until tender. Check a piece of potato with a skewer or tip of a sharp knife before serving.
