5 tbsp vegetable oil
700g raw potatoes, finely chopped
1 onion, finely chopped
1 tsp paprika
3 tbsp chopped parsley
salt and freshly ground pepper
PREPARATION:
1. Heat the oil in a large, non-stick frying pan. Add the potato, onion, paprika and a sprinkling of salt and pepper. Stir well then cook over medium heat, stirring, for about 5 minutes. Stir in the parsley.
2. Press the mixture down lightly and leave to cook for about 10 minutes, then turn in sections it should be golden and crispy by now. Cook the other side for about 5 minutes until tender. Check a piece of potato with a skewer or tip of a sharp knife before serving.
