Pasta Tubes with Green Lentils and Bacon

INGREDIENTS:
1 onion, finely chopped
2 rashers unsmoked streaky bacon, finely chopped
3 tbsp olive oil
1 clove garlic, finely chopped
400g green lentils, drained and rinsed
1 bay leaf (optional)
1 chicken stock cube
350g dried pasta tubes (rigatoni) or basil, garlic & hot pepper rigatoni
4 tbsp freshly grated parmesan
salt and freshly ground black pepper

PREPARATION:
1. In a large pan, sauté the onion and bacon slowly in the olive oil until the onion is soft. Dont shorten the cooking time, or the onion wont taste sweet.
2. Add the garlic and lentils, bay leaf (if using), stock cube and 1.2 litres of water. Bring to the boil, season and simmer for 10 minutes.
3. Add the pasta, bring back to simmering point and cook until the pasta is done 13 minutes. You may need to add more hot water from the kettle. Serve with parmesan.
