INGREDIENTS:

175g plain flour
1 tsp baking powder
2 tsp bicarbonate of soda
75g wholemeal flour
25g wheatgerm
125g light muscovado sugar
40g poppy seeds
pinch of salt
75g reduced-sugar orange marmalade
1 large egg
4 tbsp vegetable oil
100ml orange juice
2 tbsp full-fat or skimmed milk
1 large carrot, finely grated





PREPARATION:
1. Preheat the oven to 200C/400F/gas mark 6. Line a tin with 9 American-style muffin cases.

2. Sift the flour, baking powder and bicarbonate of soda into a bowl, then stir in the rest of the dry ingredients.

3. Add all the remaining ingredients and beat well for 1-2 minutes until evenly mixed. Divide among the paper cases and cook towards the top of the oven for 20-25 minutes until risen and firm.
