Organic Spaghetti with Sausage, Lemon and Olives

INGREDIENTS:
5 tbsp extra-virgin olive oil
450g good-quality pork and herb sausages, skinned
3 garlic cloves, crushed
2 tsp caraway seeds, crushed
500g spaghetti, linguine, fettuccine or tagliatelle
50g pitted black olives, sliced
shaved parmesan and roughly crushed black pepper to serve
salt

PREPARATION:
1. Heat 2 tbsp olive oil in a frying pan. Fry the sausage meat, garlic, caraway seeds and half the lemon zest until the mixture becomes crumbly and golden.
2. Meanwhile, bring a large pan of salted water to the boil and cook the spaghetti to packet instructions.
3. Drain well, tip into a warm serving dish, fold in the sausage mixture and top with the remaining lemon zest, oil and lemon juice.
4. Add the olives, toss and serve topped with parmesan and black pepper.
