Prawn, Lime and Papaya Salad

INGREDIENTS:

4 fresh limes
24 headless prawns, shelled and deveined
2 tbsp virgin olive oil
1 mild, red chilli, deseeded and finely chopped
100g wild rice, cooked in advance to packet instructions
1 papaya, peeled and deseeded
4 spring onions, shredded
125g radishes, diced
25g coriander
4 large tortillas
salt and freshly ground black pepper


PREPARATION:
1. Grate the rind and squeeze the juice of 3 limes. Add to the prawns. Season well and leave for 3 minutes.

2. Heat a wok until smoking. Add the oil, prawns and half the lime juice. Stir-fry for 3 minutes.

3. Add the chilli and remaining lime juice, reduce the heat and simmer for 1 minute. Add to the rice.

4. Cut the papaya into 1cm or 1/2in cubes and add to the rice with the spring onions, radishes and coriander. Mix well.

5. Serve with lime wedges and tortillas toasted in a grill pan.
