Apple and Walnut Salad with Curry & Coriander Mayonnaise

A classic Waldorf salad of celery, walnuts and apples given a spicy twist.

INGREDIENTS:

4 tbsp mayonnaise
1 tbsp Balti curry paste
2 tbsp lemon juice
½ x 25g pack fresh coriander, stalks and leaves finely chopped
3 Royal Gala apples, diced
2 celery sticks, thinly sliced
50g walnut pieces
25g sultanas
Maldon sea salt and ground white pepper
warmed rye bread to serve


PREPARATION:
1. In a large bowl, mix the mayonnaise, curry paste, lemon juice, coriander and 1 tsp each salt and pepper.

2. Combine the apple, celery, walnuts and sultanas and toss with the mayonnaise mixture. Serve with warmed rye bread for a light lunch.
