Lamb Cutlets with Tomato and Ginger

INGREDIENTS:

lamb1 tbsp vegetable oil
8 lamb cutlets
25g butter
16 new potatoes, cooked and diced
1 garlic clove, finely chopped
2.5cm piece fresh root ginger, finely chopped
75ml white wine
6 tomatoes, skinned, deseeded and finely chopped
1 tbsp chopped fresh parsley
salt and ground black pepper


PREPARATION:
1. Heat the oil in a large frying pan. Cook the cutlets for 15-20 minutes until cooked through. Remove and keep warm.

2. Heat the butter in a frying pan and heat the potatoes for 4-5 minutes until they are golden.

3. Add the garlic and ginger to the pan in which the lamb was cooked. Add the wine and reduce by half for about 2-3 minutes.

4. Add the tomatoes and cook for a further 2-3 minutes. Stir in the potatoes and the parsley, and season. Spoon over the cutlets and serve immediately.
