Lamb Chops with Grilled Peppers, served with a Balsamic, Fresh Herb and Chilli Dressing
A really quick and easy but satisfying dish. The balsamic vinegar is essential as it adds to a rich sweet-and-sour flavour.

INGREDIENTS:
2 tbsp sunflower oil
1 clove garlic, crushed
1 tbsp balsamic vinegar
1 green chilli, deseeded and chopped
1 tbsp fresh mixed herbs, finely chopped
2 lamb loin chops
1 red pepper, halved and deseeded
1 yellow pepper, halved and deseeded
1 green pepper, halved and deseeded
pinch each of salt and ground black pepper
buttered new potatoes, to serve

PREPARATION:
1. To make the dressing, place the sunflower oil, garlic, vinegar, chilli, salt, pepper and herbs in a jug and whisk thoroughly.
2. For the lamb, preheat the grill to high. Place the lamb under the grill and cook for 6-8 minutes. Remove from the grill, turn the lamb over and add the peppers to the grill pan. Sprinkle the peppers with some salt, return to the grill and cook for 3 minutes. Remove from the grill, turn the peppers over and cook for a further 3-4 minutes.
3. Arrange the lamb and the peppers on a plate and drizzle with the dressing. Serve with buttered new potatoes.
