1 tbsp vegetable oil
2 rump steaks
12g butter
2 spring onions, finely chopped
25g Stilton, crumbled
12g walnuts, chopped
6 tbsp whipping cream
pinch each of salt and ground black pepper
new potatoes, leeks and asparagus, to serve
PREPARATION:
1. Heat the oil in a frying pan over a medium heat. Fry the steaks for between 2½ and 6 minutes on each side, turning once. Remove from the pan and keep warm.
2. For the sauce, melt the butter in a saucepan over a medium heat. Add the spring onions and fry for 1 minute. Add the Stilton and walnuts and stir continuously until the cheese has melted. Remove the pan from the heat and add the cream. Return to the hob on a low heat for 3-4 minutes, and allow the sauce to thicken slowly.
3. Season to taste and pour over the steaks. Serve with new potatoes, leeks and asparagus spears.
