1. Preheat the grill to medium-high and grill the steak on one side for between 2 1/2 and 6 minutes.
2. Meanwhile, for the crust, heat the butter in a saucepan over a medium heat. Fry the mushrooms and garlic for 2-3 minutes. Remove from the heat and spoon into a bowl. Add the remaining ingredients to the bowl and mix well, seasoning to taste.
3. Remove the steak from the grill, turn over and press the crust mixture on top. Return to the grill and cook for between 2 1/2 and 6 minutes.
4. Serve with potatoes sauteed in fresh herbs, garlic and olive oil and a selection of steamed vegetables.
