Veal Schnitzels with Mediterranean Vegetables
A quick and easy supper dish that's healthy, too!

INGREDIENTS:
1 tbsp olive oil
4 Freedom Food veal schnitzels
1 large courgette, sliced
1 yellow pepper, deseeded and cut into strips
1 large beefsteak tomato, cut into 8 pieces and deseeded
1 clove garlic, crushed
1 tsp freshly chopped basil
1 tbsp water
2 tbsp balsamic vinegar
pinch each of salt and ground black pepper
sautéed potatoes and walnut bread, to serve

PREPARATION:
1. Heat the oil in a griddle pan or frying pan over a medium heat. Cook the schnitzels for 2-3 minutes on each side. Remove from the pan and keep warm.
2. Lay the vegetables in a single layer in the pan, scatter over the garlic and cook for 3 minutes. Turn over, then add the basil, water, balsamic vinegar and seasoning. Cook for a further 3 minutes.
3. Serve the schnitzels arranged on top of the griddled vegetables, accompanied with sautéed potatoes and walnut bread.
