Mixed Greens with Apple Vinaigrette

INGREDIENTS:

450g mixed greens
200ml extra-virgin Greek olive oil
200ml cider vinegar
45ml apple cider
pinch cayenne pepper


PREPARATION:
1. Use a combination of greens (try rocket, endive and watercress) and wash and dry well.

2. Place greens in a bowl large enough to toss them with the dressing.

3. To make the dressing, place all remaining ingredients in bowl and whisk to combine.

4. Immediately pour dressing over greens and toss to coat.

5. Divide among four plates and serve.
