Tabbouleh

INGREDIENTS:

75g bulghur wheat
juice of 1 lemon
2 tbsp olive oil
1 pack fresh mint, chopped
1 pack fresh flat-leaf parsley, chopped
1 small red onion, finely chopped or 2 spring onions, chopped
3 ripe tomatoes, skinned, seeded and chopped
salt and freshly ground black pepper


PREPARATION:
1. Put the bulghur wheat into a bowl, cover with boiling water and leave to soak for 30 minutes, then drain.

2. Add the lemon juice and olive oil, then the remaining ingredients. Season and mix well. Add more lemon juice or olive oil to suit taste.

You can add a seafood flavour to this dish with a mixture of salmon and mackerel. Serve with cucumber steeped in rice wine vinegar, rice and a coriander garnish.
