Peachy summer salad

An action-packed salad to serve as a starter or main course, or as an accompaniment to a barbecue, from iVillager sassie_g

Dish Details:low-carb


INGREDIENTS:

For the dressing:
juice of 1/2 lemon
2 tbsp olive oil
1 tsp wholegrain mustard
1 clove garlic, crushed
75g feta cheese

For the salad:
2 fresh peaches, stoned and quartered
1 iceberg lettuce, shredded
75g walnuts, halved
4 tomatoes, quartered
1/2 cucumber, cubed
4 spring onions, finely chopped
225g new potatoes, cooked
25g olives, halved
10 capers
1 tbsp parsley, chopped
25g croutons


PREPARATION:
1. Combine the dressing ingredients except the feta cheese and shake together in a screwtop jar. Then add the cheese to soak up the flavours.

2. Mix all the salad ingredients together in a large bowl. Just before you serve it, pour on the dressing and cheese and toss thoroughly.
