Brown Rice Salad

INGREDIENTS:

720g brown rice
240g spring onions, chopped
90g canned sweetcorn
60g cashew nuts
60g raisins
1½ tbsp soy sauce
3 tbsp olive oil
80g red pepper, chopped


PREPARATION:
1. Cook the rice according to packet instructions.

2. Mix all the other ingredients with the cooked rice in a large bowl and enjoy.
