Basic ratatouille

The name ratatouille comes from the French for ‘to stir’, and gives a clue to this healthy dish’s simplicity. By iVillage nutritionist Dr Wynnie Chan

INGREDIENTS:

1 medium onion, chopped
1 clove garlic, crushed
4 tbsp vegetable oil
420g aubergine, chopped
230g courgette, chopped
135g red pepper, chopped
250g skinned and chopped plum tomatoes


PREPARATION:
1. Fry onion and garlic in oil at a low temperature until soft.

2. Stir in the remaining vegetables and simmer gently for about 50 minutes.
