Chicken and Mushroom Stir-fry

Serve with noodles for a filling main course

INGREDIENTS:

iVillage rooster350g mixed white or brown mushrooms
125g pack of mixed exotic mushrooms
2 tbsp groundnut oil
2 cloves garlic, chopped
275g chicken breast, cut into strips
1 red pepper, de-seeded and sliced
1 bunch spring onions, sliced
2.5cm piece of fresh root ginger, peeled and grated
2 tbsp soy sauce
2 tsp clear honey
1 tbsp tomato sauce


PREPARATION:
1. Slice the larger mushroom. Heat the oil in a wok and stir-fry the garlic for 30 seconds.

2. Add the chicken and stir-fry for 5 minutes

3. Add the pepper, onions, ginger and sliced mushrooms and stir-fry for 8 minutes.

4. Stir in the whole mushrooms, soy sauce, honey and tomato sauce and stir-fry for a further 2 minutes. If you like, serve with cooked noodles.
