Pork Chops with Sage and Apple Sauce

INGREDIENTS:
2-3 cooking apples, depending on size (Bramley's are good)
grated zest of 1/4 lemon
2 tsp sugar
3 tbsp apple juice or water
4 pork chops
salt and freshly ground black pepper
4 sage leaves, finely chopped

PREPARATION:
1. Peel and core the apples and cut into chunks. Place in a medium saucepan along with the lemon zest, sugar and apple juice or water. Cover and cook over a very low heat, checking and stirring occasionally until soft, about 10 minutes.
2. Meanwhile, heat the grill or a large frying pan, season the chops and grill or fry about 5 minutes each side until done.
3. Stir the chopped sage into the apple sauce and serve with the pork chops.
Tip: Apple sauce freezes well so you can make a large batch and freeze in small portions for other meals. Finely chopped thyme and rosemary would also go well in place of the sage.
