Fireworks Biscuits

This recipe is nice and simple, so kids can help out in the kitchen. From the basic base, you can make a variety of biscuits... here, we've made a choc chip version and a Bonfire Night 'Catherine Wheel' biscuit

INGREDIENTS:

fireworks150g plain flour
pinch of salt
75g caster sugar
100g soft butter
25g candied peel and/or chocolate chips
2 different food colourings of your choice


PREPARATION:
1. Preheat the oven to 180C/350F/gas mark 4.

2. Sift the flour and salt into a bowl and add the butter.

3. Using your fingers, pinch together the flour and butter to form crumbs and then knead into a dough.

4. For the chocolate chip biscuits: Divide the dough into two. Knead the candied peel and/or chocolate chips into one half, then roll out to 1cm thick and cut out biscuit rounds.

5. For the Catherine Wheels: Divide the rest of the dough into two. Knead a few drops of food colouring into each half on a plate. Shape each piece into a long sausage and roll out into a long thin rectangle. Place one coloured rectangle on top of the other and gently roll up like a swiss roll. Using a sharp knife, cut off slices about 1 cm thick and you should have a colourful Catherine-wheel-like spiral.

6. Lay both types of biscuit out on a greased baking tray and cook for 15 minutes.
