Limoncello

Present this home-made lemon-zest liqueur with a pretty twirl of lemon peel in the bottle

Dish Details:


INGREDIENTS:

zest from 15 large lemons, well scrubbed and dried
2 x 750ml bottles vodka (ideally 100 proof)
1kg granulated sugar
1 litre water

You will also need a lidded 4-litre jar


PREPARATION:
1. Remove zest carefully with a sharp vegetable peeler to avoid any pith. Fill jar with vodka from one bottle, add all zest, cover and store in cupboard.

2. After 40 days, boil sugar and water in a saucepan for 5 minutes until the sugar dissolves and turns syrupy.

3. Cool, then add to the lemon liquor with the second bottle of vodka. Cover and store a further 40 days before drinking.

4. When ready, strain into clean bottles, reserving some zest for decoration.

If you run out of time for Christmas, present the bottled limoncello with a small card tied to the neck explaining when it will be ready to drink.
