Sloe Gin

This berry-flavoured liqueur, once the preserve of middle-class Victorian ladies, is now a trendy drink that tastes best when made at home

Dish Details:

INGREDIENTS:

450g sloes or damsons
1 x 750ml bottle gin
250g sugar

PREPARATION:
1. Rinse the berries, discarding any that look bruised or burst.

2. Prick each berry 12 or so times (traditionally done with the thorns from the blackthorn bush, on which the sloes grow).

3. Place all ingredients in a lidded container and shake regularly over six to eight weeks.

4. When the liqueur is a deep red colour, strain and leave for a further month before drinking.
