500g spaghetti
100ml extra virgin olive oil
23 cloves garlic, finely chopped
2 red chillies, deseeded and finely chopped
salt and black pepper
fresh flatleaf parsley, chopped (optional)
PREPARATION:
1. Cook the pasta in a large pan of boiling, salted water.
2. Meanwhile, heat the olive oil in a small saucepan and cook the garlic and chilli very gently for several minutes. They should just be allowed to infuse, not fry or colour. Add the salt and pepper.
3. Drain the pasta and return to the pan. Pour over the oil and chilli and mix well, adding the parsley, if using. Serve immediately.
