125g butter
200g sugar
1 egg
1 tsp vanilla extract
3 ripe bananas
175g flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
25g cocoa powder
You will also need a baking tray roughly 30cm x 20cm
PREPARATION:
1. Preheat the oven to 180C/350F/gas mark 4. Cream the butter and sugar in a mixing bowl. Add the egg and vanilla and beat until thoroughly combined. Blend in the bananas.
2. Combine the flour, baking powder, baking soda and salt. Add to the creamed mixture and mix well.
3. Divide this batter in half. Add the cocoa powder to one half and spread in a greased baking pan. Spoon the remaining batter on top and swirl with a knife. Bake for 25 minutes. Cool then slice into bars.
