1. Preheat the oven to 190C/375F/gas mark 5 and lightly oil a 12-cup muffin pan with cooking spray.
2. Stir together the bananas, oil, honey and vanilla essence.
3. In another bowl, combine the flour, baking powder, almonds, salt, nutmeg and bicarbonate of soda. Stir the wet ingredients into the dry ingredients and mix well until combined (but don't over mix).
4. Spoon the mixture into the prepared muffin tin, filling to the rim of each cup. Bake for 3025 minutes until golden brown. Serve warm with honey.
