Spicy Lime and Coriander Paste

A delicious topping for grilled chicken or fish

INGREDIENTS:

2 cloves garlic
1 tsp sea salt
1 small piece of root ginger, grated
grated zest and juice of 1 lime
¼ tsp ground cinnamon
¼ tsp ground cumin
a good handful of fresh coriander, chopped
4–5 tbsp light olive oil


PREPARATION:
1. Place everything but the oil in the bowl of a food processor and whiz to a paste.

2. With the motor running, add the olive oil to make a smooth but not too thin sauce.

Store in a jar in the fridge (can also be frozen) and use to spread on fish or chicken breasts before grilling.
