Garlic and Chive Vinaigrette

INGREDIENTS:

1/8 tsp Dijon or other French mustard
2 tbsp red wine vinegar
6 tbsp light oil
1 clove garlic, peeled but left whole
salt and freshly ground black pepper
pinch of sugar
1 tbsp fresh chives, chopped


PREPARATION:
Shake together everything but the chives. Just before serving, add the chives and use to dress green leaf salads or warm new potatoes.
