
INGREDIENTS:
2 tbsp olive oil
1 Spanish onion, sliced
500g (1lb 2oz) halved new potatoes
1 tbsp paprika
2 cloves garlic, crushed
1x180g pack trimmed green beans, halved
1-2 firm pears, roughly chopped
1x400g can chopped tomatoes
1x400g can chickpeas, drained
300ml (1/2 pt) water
1 vegetable stock cube

PREPARATION:
Heat the olive oil in a flame-proof casserole dish and saute the onion. Add the new potatoes, paprika and garlic. Stir well for 1-2 mins then add the green beans, pears, chopped tomatoes, chickpeas, water and stock cube.
Bring to the boil then cover and simmer for 30 mins until tender. Season to taste and serve with crusty bread.
