Make a marinade by mixing together in a large bowl the olive oil, lime juice, cayenne pepper and paprika.
Marinate the chicken breasts while you start the rice
Heat the vegetable oil in a saucepan and sauté the chopped onion and green pepper.
Add the rice and mix well, then stir in the boiling water or chicken stock and simmer for 10 mins or until rice is cooked.
Remove the chicken from the marinade and cook in a non-stick frying pan or on a ridged grill pan for 15-20 mins until cooked through. Add the chopped parsley and coriander to the rice. Serve with the chicken on top and lime wedges to garnish.
