Tiger prawn salad with lime and coriander

INGREDIENTS:

1x125g pack Tesco Finest New World salad
2 tsp groundnut oil
2 tsp sesame oil
1 red pepper, deseeded and chopped
200g (7oz) cooked and peeled tiger prawns
juice of 1 lime
2 tbsp freshly chopped coriander
salt and freshly ground black pepper
a few sprigs fresh coriander to garnish


PREPARATION:

Place the salad in a serving bowl.

Heat the oils in a frying pan, add the pepper and prawns and saute for 2-3 mins. Transfer to a bowl and add the lime juice and coriander. Season, stir well and leave to cool

Place the prawns and dressing over the salad and serve garnished with a few sprigs of fresh coriander.
