Take your chicken breasts and remove and sinews or fat from edges. With a sharp knife score the skin side but not so you are cutting deep into the meat.
Mix together the Honey with the olive oil, and add to your taste salt and pepper, ensuring that it is thouroughly mixed in.
Take your crushed garlic and rub it into the chicken skin, repeat with each breast.
Place chicken in an oven proof dish and drizzle the honey and oil mix over the top - make sure all the breasts are evenly coated on the skin side.
Place in a pre-heated oven (200C) for 25-30 minutes.
Once the chicken is cooked through remove from oven and place under a hot grill for a few minutes to create a dark golden colour. Serve.
