Sardine bruschetta

Sardines are an excellent source of omega-3s, which provide a whole range of health benefits, including boosting brainpower and protecting against some cancers. This easy recipe can be a main or a starter

INGREDIENTS:

2 120g tins of sardines in tomato sauce
1 400g tin chopped peeled plum tomatoes, drained
2 farmhouse-style bread rolls
2 cloves crushed garlic
1 finely chopped red onion
Large handful finely chopped fresh basil
1 tbsp olive oil


PREPARATION:
1. Place the plum tomatoes, red onion, garlic, basil and olive oil in a large bowl, mix thoroughly and season with salt and pepper.

2. Cut the rolls in half and place in a hot oven at 220C/245F/gas mark 7 for 2 minutes.

3. Remove the rolls from the oven and spoon the mixture over the top of each roll.

4. Place the sardine fillets on each roll and return to the oven for a further 4 minutes. Serve warm.
