Mango Mojito Sorbet

A refreshing, fruity sorbet with a hint of rum.

Dish Details:


INGREDIENTS:

Mango Mojito Sorbit40 mint leaves
2 tablespoons simple syrup
? cup lime juice
? cup rum, or to taste
? cup small diced mango
Mango-Pineapple Sorbet


PREPARATION:
1. Place mint leaves and 1 tablespoon each of the agave syrup and lime juice in a glass. Crush or 'muddle' them with the blunt end of a wooden spoon until the mint is broken up and releases its juices.

2. Stir in the remaining agave syrup, lime juice and rum. Adjust to taste.

3. To serve, scoop the sorbet into decorative glasses and divide the mojito muddle over each.
