Chilli Burgers

Delicious burgers with a chilli kick

INGREDIENTS:

Chilli burgers2 rashers Red Tractor streaky bacon, chopped
1 Red Tractor tomato, chopped
2tbsp Cajun seasoning
450g Red Tractor extra lean minced beef
1tbsp tomato puree

For the relish

1 Red Tractor red pepper, deseeded and diced
2 Red Tractor tomatoes, deseeded and diced
1 Red Tractor small onion, chopped
2 tbsp tomato ketchup
1tsp vinegar
1tbsp Red Tractor parsley, chopped

To serve

4 bagels, halved and toasted
Chunky potato wedges
Few rocket leaves


PREPARATION:
1. Dry fry the bacon for a few minutes until it is just beginning to crisp. Add the chopped tomatoes and cook for 2 minutes. Stir in the Cajun seasoning.

2. Place the mince in a bowl and add the bacon mixture and puree. Season well and squish the mixture together. Divide into 4, and shape into patties.

3. Grill on a ridged griddle or under the grill for 15 minutes.

4. Meanwhile, make the relish: throw the relish ingredients into a food processor and process for a few seconds.

5. Serve the burger on a bagel with the relish, salad and chunky potato wedges.
