Sri Lankan potato and coconut curry
This couldn't be simpler, serve as a main dish with rice, or as a smaller side dish. See also Sri Lankan Coconut Sambal

INGREDIENTS:
Potatoes (small), 6
Coconut, 1
Garlic, 2 cloves
Green chilli, 1
Mixed herbs
Onion, 1
Curry powder, half teaspoon
Yellow powder, half teaspoon
Chilli powder, half teaspoon
Ground cardamom, half teaspoon
Salt and pepper

PREPARATION:
1. Par boil potatoes
2. Roughly chop the onion and herbs. Finely chop the garlic and chilli.
3. Grate the coconut, mix with water (1 part coconut, 2 parts water) and strain, repeat once more to make the coconut milk. (alternatively can use canned coconut milk)
4. Chop potatoes into quarters, and add to a large pan with onions, herbs, garlic and chilli.
5. Add spices, salt and pepper and boil for 10 minutes.
6. Reduce the heat and simmer for 10 minutes, stirring regularly
