Pepper, red onion and goat's cheese frittata

INGREDIENTS:

Pepper, onion, goat's cheese, frittataEggs 6
Oil
Red onion 1, halved and sliced
Red pepper 1, chopped into 2cm pieces
Goat's cheese 100g
Paprika 1/2 tsp
Soft herbs a small handful of parsley and chives, roughly chopped


PREPARATION:
1. Beat the eggs and season well. Heat 1 tbsp oil in a small non-stick frying pan and cook the onion and red pepper for 3-4 minutes to soften. Add the eggs and cook for 5-6 minutes until almost set.

2. Dot the goat's cheese over, then scatter the paprika and herbs over the top and slide under a hot grill for 2-3 minutes until golden. Cut into wedges and serve with salad.

GI assessment

This recipe is so low carb that it won't cause a rise in blood sugar. The key to eating a healthy low-Gi diet is to accompany no-carb meals with slow carbs, so serve this with some crusty seeded bread.
