1. Heat 1 tbsp oil in a wok or large frying pan to smoking hot. Add the steak and cook for a minute, turning to seal and lightly brown. Turn the heat down to medium and add the curry paste. Stir well and add 2-3 tbsp water.
2. Add the beans and red pepper and cook for 5-6 minutes. Add a little more water if you prefer more sauce and serve with the brown basmati rice and the peanuts sprinkled over.

This recipe is a Gi star. It's full of low to medium Gi ingredients, especially the rice, peanuts and veg.

This also works well with pork. It's quite spicy so you might like to add a little coconut milk instead of the water.
