1. Cook the pasta according to pack instructions. Meanwhile, cook the chorizo for 2-3 minutes in a non-stick pan. Add the garlic and tomato and season. Cook for a couple more minutes then add the wine. Simmer gently for 4-5 minutes then stir through the parsley and pasta.
GI assessment
Pasta is a classic low-Gi food. Watch the portion size as too much will cause a faster rise in blood glucose - so divide this between three and serve it with salad.

Add a tin of chopped tomatoes instead of the sunblush tomatoes if you'd like more sauce and serve with parmesan.
