Purple broccoli with Parmesan and herb crumbs

Dish Details:


INGREDIENTS:


25g butter
4 tbsp olive oil
50g white breadcrumbs
1 tbsp chopped thyme leaves
25g grated Parmesan
700g purple broccoli
Lemon wedges


PREPARATION:
1. Heat 25g butter and 4 tbsp olive oil in a frying pan. When the foaming subsides, add 50g white breadcrumbs and stir over a high heat until golden. Season with salt and ground black pepper and 1 tbsp chopped thyme leaves. Leave to cool in a bowl then stir in 25g grated Parmesan.

2. Add 700g purple broccoli to a pan of boiling salted water. Cook for three to four minutes until tender. Drain and return to the pan. Drizzle with olive oil, add salt and pepper and reheat, shaking gently.

3. Arrange on a warmed serving dish and scatter with the Parmesan crumbs. Garnish with lemon wedges and serve immediately.
