White soda bread

Possibly the more familiar version of the Irish bread, this recipe for white soda bread makes the perfect accompaniment to a Paddy's Day feast

Dish Details:


INGREDIENTS:

450g plain flour
1 level tsp bread soda
1 heaped tsp Bextartar (cream of tartar)
Pinch of salt
25g soft margarine
1 egg whisked with 250ml buttermilk


PREPARATION:
1. Preheat oven to Gas Mark 6/200C/400F).

2. Sieve the dry ingredients into a big bowl. Rub in the margarine. Pour in the egg and buttermilk mixture and stir well. Turn out onto a floured board and knead lightly for a minute or two. Shape into a round, flatten slightly.

3. Place on a baking sheet. Mark with a deep cross and bake in the preset oven for approximately 35-40 minutes.

4. Cool on a wire rack.
