Irish Rarebit

A cheesy favourite, appropriately stamped with the symbolic Irish shamrock

Dish Details:


INGREDIENTS:

2 tbsps butter or margarine
2 tbsps flour
1 tsp Dijon mustard
1 tsp honey
1/2 cup milk
2 spring onions finely chopped
1 cup Irish farmhouse cheese, such as St Gall (traditional rennet) or Mt Callan (vegetarian rennet), grated
2 dessert spoons creme fraiche
Salt and pepper


PREPARATION:
1. Melt the butter in a heavy pan and stir in flour to make a roux. Cook on a low heat for a further minute without allowing it to brown.

2. Remove pan from heat and gradually beat the milk into the roux. Return to heat and stir until the mixture thickens.

3. Stir in mustard and honey and finally the spring onions. Cook this mixture fairly rapidly for 2-3 minutes then add grated cheese and stir over very low heat only until all the cheese has melted.

4. Spread thickly on four slices of Irish Soda Bread, toast and brown under the grill.
