1. Wash the potatoes in cold water to remove any soil. Give them a gentle scrub if necessary, but make sure you leave on their fine skin. Cut any large potatoes in half, so that all the pieces are of equal size to ensure even cooking.
2. Bring a large pan of water to the boil and add a good pinch of salt. Add the
Jersey Royals and the mint sprigs, if you have decided to use them.
3. Simmer the potatoes for 10-15 minutes or until they are just tender. Drain well and serve them warm, with your choice of flavoured butter below.
