Wild Rocket Salad

A simple variation on the classic green-leaf salad.

INGREDIENTS:

2 tbsp lemon juice
1 tbsp tarragon vinegar
125ml light oil (olive or sunflower)
salt and freshly ground black pepper
150-200g wild rocket, chopped
Parmesan shavings (optional)


PREPARATION:
1. Whiz everything except the rocket and the Parmesan in a food processor or blender.

2. Toss the dressing through the rocket. Top with Parmesan shavings if desired.
