Watercress Salad with Grapefruit Vinaigrette

INGREDIENTS:

juice of 1 pink grapefruit (about 100ml)
125ml grapeseed oil
salt and freshly ground black pepper
150-200g watercress
3 grapefruit, cut into segments


PREPARATION:
1. Whisk together the juice, oil and seasoning.

2. Arrange watercress and grapefruit segments in a bowl or serving plate(s) and pour over the dressing.

Variation

For an elegant starter, add 2 tbsp walnut oil and reduce the grapeseed oil to 100ml. Scatter walnut halves over the salad.
