Pineapple and Mango Chilli Salsa

Chillies feel right at home in salsas, the fresh chunky salads that are both sweet and savoury. Serve this one with all types of grilled or barbecued meats

INGREDIENTS:

½ fresh pineapple, peeled, cored and chopped into 1cm chunks
1 mango, peeled and chopped into 1cm chunks
1–2 small red chillies, deseeded and finely chopped
½ small red onion, finely chopped
1 tbsp fresh basil, shredded
1 tbsp fresh mint, chopped
juice of 1 lime


PREPARATION:
Mix the ingredients carefully, taking care not to break up the tender mango.

Serve with fried goujons of fish or chicken.
